It's Wednesday & That Means Golf!
Another surprise...found this little treasure on my desk this morning. One of my favorites - thanks Wendy!!

First night of golf league tonight! We couldn't go that long without playing on Wednesday nights! Ally convinced me to join the Winter League at Castle Rock's new rec center, The MAC. We are playing on a simulator. I started out well, but then fell apart at the end. I did hit from one bunker to another and then chipped it in from the second bunker for par...wish I could do that on the real course!

Eagle!
For several holes, the best part of last night was no rain. Then I got the par four, 5th hole. I know I've gotten an eagle before, but just don't remember when. Now I can say my last eagle was October 22, 2014. I managed to save it for the next to last week of post-season league play...would have helped my ringer score get under 30! I wasn't overly impressed with my tee shot and was about 112 yards out. Hit my pitching wedge, the ball hit 3-5 yards short of the pin and the rest is history. It was a fun shot!!

Had to add the Starbursts...one of my favorite sweet treats to eat and share. Love my pink and red!:)

No Luck
Made my way to the Super Target this evening...with hopes of finding some new Oreos. No cookies, just M&M's. And they tasted nothing like pumpkin spice. The wait continues!

Restaurant Week...Summer Style
We only made one reservation for the week...Shanahan's. We had yummy filets and a great evening with Matt & Dana!! 









Prior to our evening out, my "sneaky bison" at work got my Monday started off GREAT with a baggie of Reese's Peanut Butter Cups...absolute YUM!!

Pretzel Bites

Pretzel Bites
Decided to make some treats for the class I'm teaching tomorrow night. It won't take the place of green beer, but hopefully they will appreciate them. 

Easy to make treats and they can be done for any holiday.













Here's what you need:
  • Square pretzels (I used Snyder's of Hanover.)
  • Chocolate candy melts (Wilton is the brand I use.)
  • M&Ms (For this particular batch I used mint due to the fact they were three different shades of green.)




Here's what you do:
1. Preheat the oven to 350 degrees.
2. Line a baking sheet with parchment paper.
3. Arrange the pretzels on the sheet.

4. Place one candy melt on each pretzel.

5. Place baking sheet in the oven for about 2 minutes. You will want to keep a close eye on the chocolates. You only want to get them melted enough so that the M&M can be pushed into the melted disc.

6. Remove the baking sheet from the oven and lightly press one M&M into each disc. You will want to move quickly.

7. Let the bites cool. This should take about an hour, depending on the type of chocolate you've used. If you are in a hurry, you can place them in the fridge for a little while.

Other options:

1. I had pretzels and discs left over, but no M&Ms. So I replaced the M&M with a whole pecan.
2. Use Rolos or Hershey Kisses in place of the candy melts. You can still top them with either M&Ms or pecans.

Baking & Golfing
After getting my groceries this morning, I got to work on my St. Patrick's Day treats. I have an 8AM meeting tomorrow for which I made pistachio bread and green fruit kabobs.

I am teaching a class tomorrow after school, so for this one I made pretzel bites.











Finally, I had to make something for my other peeps. Since I only remembered the Mint Oreos and almond bark, but not the cream cheese, I had to make dipped Oreos instead of my truffles. They are still yummy!












Later in the afternoon we got the 2014 golf season officially underway. We headed over to the Red Hawk range and hit some balls. It actually went really well...hope to make it out a few more times before heading to Arizona.

SUGAR!

As I walked through the halls of school today, I noticed one constant...the smell of sugar. As I walked into a classroom I was greeted by a wall of the sweet smell. Not only were students consuming large amounts of sugar, but they were also creating gingerbread houses (or in the case of the 6th graders - gingerbread condos!)
