Spicy Thai Noodles
Over the weekend I came across several Asian inspired recipes on Pinterest...decided to give one a try tonight. After looking over the recipe and the comments, here's what I did:

INGREDIENTS:
1 box Thin Spaghetti
12 oz Thinly sliced & cooked chicken breast
2 tsp Ground Ginger 
3 Peeled & shredded carrots
1/3 C Green Onions
1/3 C Cilantro
3/4 C Peanuts
Sesame Seeds to taste



SAUCE:
1 tbsp Crushed Red Pepper (I would have used more, but someone in this house is a little sensitive to heat...and it's not me.)
1/4 C Sesame Oil + 1/4 C Sesame Seed Oil
4 tbsp Honey
6 tbsp Soy Sauce
2 tbsp PB2 Peanut Butter Powder
1/4 C Rice Wine Vinegar

DIRECTIONS:

1. Boil noodles.  Drain.
2. While the noodles are boiling, slice and cook the chicken and ginger.
3. Heat both oils and crushed red pepper over medium heat in a small pan for 2-3 minutes. Strain out pepper and reserve oil. 
4. Whisk in honey, soy sauce, peanut butter powder, and rice wine vinegar. 
5. Toss mixture with noodles. 
6. Chop green onions, carrots, cilantro, and peanuts. Add to mixture and toss.
8. Season with sesame seeds and Sriracha.

PD on VD
This title only makes sense to teachers...Professional Development on Valentine's Day. I'm a part of our Staff Development team and Kim, our Building Resource Teacher, asked me to tap into my Pinterest skills and help with decor and snacks. How could I say no?!?! The funny thing is, I began looking through my Valentines pins, I realized that I needed more pins!! These were the centerpieces I made for today. They were a big hit with the coworkers and were a lot of fun to make!

Scarecrow Mix
Found the idea for this recipe on Pinterest and had to give it a try. Took some to the pumpkin carving party with my sisters. Here are the ingredients:
Cheeze-Its
Square Pretzels
Candy Corn
Unsalted Peanuts
Caramel Popcorn
Cocoa Puffs
Reeses Pieces

For most of the items I just eye-balled it, no specific measurements.

Valentine Treats

These are easy and fun treats to make for your coworkers!
Ingredients:

  • square pretzels
  • chocolate melting chips (red, pink, white)
  • decorative sprinkles


Directions:

  1. Heat your oven to 200 degrees.
  2. Place as many pretzels as you can, in a single layer, on a cookie sheet.
  3. Place one of the chips on each of the pretzels.
  4. Place cookie sheet in the oven for approximately 4-5 minutes. Keep an eye on the chocolates and when they start to get shiny and soft, you can remove them from the oven.
  5. Immediately sprinkle the melted chocolate with your sprinkles and let the treat cool.
  6. Once they are cool, place in decorative bags or tins.

Breakfast Sandwich

While on Pinterest over the weekend I came across a good looking sandwich. But when I went back to look...it was gone! :( Anyway, I was able to remember what I needed, so I came up with this yummy concoction this am.

Here's my recipe for the half sandwich I made:
-1/4 of a small, Granny Smith apple (warmed)
-1/3 of a banana
-one slice of bread
-one serving of peanut butter
-maple syrup

1. Toast the bread and spread it with the peanut butter.
2. Cut the apples into small wedges, place in a small bowl with water (enough to completely cover the apple slices). Place the apples in the microwave for 15-30 seconds...be sure not to boil the water.
3. Place the apples on the bottom half of the bread.
4. Cut the 1/3 of banana into long slices and place on top of the apples.
5. Drizzle just a small amount of maple syrup over the bananas and top with the other piece of bread.

If you don't like maple syrup, you may want to use honey or agave nectar. You could also do some experimenting with different types of fruit. ENJOY!!!

No Calorie Counting Today!

Well, there was no calorie counting this morning! I had found two recipes on Pinterest that I wanted to try...a yummy Frothy Mexi-Mocha Coffee and Buttermilk - Blueberry Breakfast Cake. I really enjoyed the breakfast cake...next time I would probably put in another teaspoon of lemon zest. The coffee was VERY sweet...could have probably used a little milk or extra 1/2 and 1/2.

We had to get our energy for the GREAT Bronco's game-watched them beat the Steelers.

White Chicken Enchiladas with Green Chile Sour Cream Sauce

Found this recipe on Pinterest and decided to give it a try...it was very YUMMY!! I cooked a whole chicken in the crock pot during the day and used a combo of dark/white meat in the enchiladas. (I was left with a lot of chicken to use in another recipe.)
