Family Dinner
So a little while back I posted a photo of yucca root...not sure how it was supposed to be fixed...just looked interesting. Well, I can say that I have officially eaten yucca root and I loved it!! The Muggenthalers hosted family dinner tonight and everything was Cuban inspired. We enjoyed everything from shrimp to beef to pork to plantains to mangos. (And a few Cuban drinks mixed in...or course!!)

So I was grocery shopping tonight and came across yucca root. I'd heard of it, but had no idea of its uses. After a quick Google search, discovered that yucca root can be fixed just like potatoes! This Cuban-Style recipe looks yummy and you can even make yucca chips! Might have to pick some up next time.
For those of you wondering...still no Big Sexy Hair...tomorrow will be another day of "Little Non-Sexy Hair." The store on the east side of Castle Rock doesn't carry the product. :(
