Finally got the lunch leftovers eaten and on to something new! I have the salsa verde, pepper, onion, and spice mix ready to put in the crockpot with the pork in the morning. First time with this recipe, so I'm anxious to see how it turns out!

Out for Lunch
A colleague and I were out at a software training today, so we were able to have a "grown-up" lunch at one of my FAVORITE Castle Rock restaurants...Yolanda's. As teachers we always joke about our lunch compared to the lunch of other professions. We always look forward to opportunities for lunch outside of school. I know...it can be the silly things in life that we talk about. Good news is we are at the training again tomorrow...decision, decisions!!
